Ingredients

  • 1 Rocky Pastures Ranch Whole Chicken, spatchcocked
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 lb baby potatoes, halved
  • 3 carrots, chopped
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Whisk olive oil, maple syrup, Dijon, and vinegar in a bowl.
  3. Brush chicken generously with the glaze and season with salt and pepper.
  4. Arrange potatoes and carrots around the chicken; drizzle with remaining glaze.
